- 200g softened butter
- 400g icing sugar
- 1 tbsp milk
- ½ tsp vanilla extract
- 200 g marshmallows (with the flour coating not sugar coating – Haribo pink & white are ideal)
- Beat everything together apart from the marshmallows until smooth. Leave the mixer on and in a glass bowl heat your marshmallows in a microwave for 30 second intervals until they have double in size.
- When you’re sure they have doubled in size quickly transfer them to your buttercream and beat until you want to pipe your mixture.
- This is a little trickier to make than regular buttercream but your friends and family will thank you for it.
