Marshmallow buttercream


  • 200g softened butter
  • 400g icing sugar
  • 1 tbsp milk
  • ½ tsp vanilla extract
  • 200 g marshmallows (with the flour coating not sugar coating – Haribo pink & white are ideal)


  • Beat everything together apart from the marshmallows until smooth. Leave the mixer on and in a glass bowl heat your marshmallows in a microwave for 30 second intervals until they have double in size.
  • When you’re sure they have doubled in size quickly transfer them to your buttercream and beat until you want to pipe your mixture.
  • This is a little trickier to make than regular buttercream but your friends and family will thank you for it.
